Brussels Sprout Slaw with blue cheese, toasted almonds and bacon!

I have made this salad a handful of times recently, and it always seems to get good reviews, so I thought I'd share the recipe:


- 4 cups Brussels Sprouts shredded (If you have a food processor it's by far the easiest way to shred the sprouts into small pieces)

- 1 apple (cut into small cubes)

-1/2 blue cheese (cut or crumbled into small pieces)

- 1/2 roasted almonds

- Bacon to taste

-Dressing: 1 Tbsp. olive oil, 1 Tbsp. lemon juice from a fresh lemon, 1 tsp. maple syrup, 1 tsp. white wine vinegar, 1 Tbsp. dijon mustard, salt and pepper to taste

The blue cheese really makes the salad pop, the bacon adds some delicious fatty, saltiness, while the almonds add a good crunch and the apple brings it all to life!
