Emily's Meatloaf Recipe

Emily's Meatloaf served with sautéed green cabbage and mushrooms:

Gluten free and sugar free and a great way to sneak some veggies into your kids’ dinner without them knowing it’s infused with vegetables!


1 small onion
5 garlic cloves
1/2 a zucchini 
3 small carrots
1 egg
1 cup fresh parsley 
1 tsp paprika 
Salt, pepper, cayenne pepper to taste
1 lb ground pork
1 lb ground beef 
1 cup cooked brown basmati rice, although you could use 1 cup ground almonds or 1 cup hemp seeds instead of rice if you’re anti-rice...


Step 1: Put all ingredients except the meat and rice in a food processor and process until smooth.

Step 2: In a bowl, mix the ingredients from the food processor with the ground beef and pork. Add the cooked rice and mix together with your hands until it’s all mixed.

Step 3: Press into a pan. Pour some tomatoes sauce on top (I used homemade tomato sauce, but any sugar free tomato sauce would worm well).

Step 4: Bake at 375 F for 30 to 40 minutes.

Serve with sautéed cabbage and mushrooms like I did, or potatoes and broccoli or asparagus.
