An easy simple snack


Ingredients:

2 ripe bananas 
1/2 cup peanut butter 
1/4 cup melted coconut oil 
1 tsp vanilla extract 
1 cup of oats (or Gluten Free oats)
1/2 cup desiccated coconut
1/2 cup roughly chopped almonds
1/2 cup roughly chopped cashews 
1/3 cup sunflower seeds
1/3 cup pumpkin seeds 
2 TBSP chia seeds 
1/2 cup sultanas
1/4 teaspoon of sea salt

1 tsp of cinnamon 
The zest of 1 lemon

Method:

Preheat oven to 180 degrees C 
Blend together bananas, coconut oil, vanilla & peanut butter 
Tip the blended ingredients into a bowl and mix these with the rest of the ingredients
Line a baking tin and press the mixture firmly into this 
Bake for 30 mins @ 180 degrees C
Remove from oven and cut into bars
